You've Been Boiling Eggs Wrong And That's Why They Won't Peel

If your boiled eggs come out cratered and half the white sticks to the shell, two things are usually going on.

Very fresh eggs are the hardest to peel. Their lower internal pH makes the white cling stubbornly to the membrane.
So reach for slightly older eggs for boiling, and drop them into already-simmering water rather than starting them cold.
The moment they're done, plunge them into iced water. The shock contracts the white away from the shell and it slips off in big clean pieces.
